Thumbs up from the most remarkable woman

Being home for three and a half months seems like a long break but time flies when you're around people you love, who also annoy you at times. That is part of the fun, is it not?!

Now that I'm back in London, I miss my sister popping into my room, her nagging me, my little niece who loves playing with my stuff, her waking me up before 7am cause she had too much sleep, having breakfast with my parents and his group of friends, exercising at Botanical Garden, brother-in-law buying me Aki's pancake for supper, deciding what's for dinner and all that. That was practically all that I have done the last months of 2011. Although there was a long list of activities and travel destination on my list that I prepared to do when I was back, most of that did not happen. That includes learning to scuba dive and get a PADI license so I can see the underwater world of Pulau Perhentian and Pulau Sipadan, see the endangered proboscis monkey and seastacks at Bako National Park, visit Cambodia and Bali, hike up Penang Hill again and kayaking. At least I went on the longest canopy walk.

It is not that I have been lazing around doing nothing. A choice was made! I prefer to spend as much time with mum and to take good care of her, making sure she was happy and comfortable for as long as I was there. Knowing that she did not have much time with us and secretly hoping for a miracle was heartbreaking. It was one of the most mentally challenging moments of my life.

She is the strongest person I know, the most sincere and caring, with the biggest heart. She's a fighter!! She made it through 13 years since she was diagnosed a stage 4 lung cancer. She was there with me through high school, saw me graduate, supported my decision to stay in London, held me through my ups and downs, saw my brother and sister got married and saw the birth of  her grandchildren. She even made it through her first relapse. The second was her limit.

One day, I decided to make some kaya (coconut jam) for my family and our kindest neighbours. It was a totally different experience cooking at home and cooking in my eastend kitchen. Mum's kitchen had everything you need. I could also get fresh coconut milk from the market and not a canned version from Chinatown. Did I mention mum's such a lovable person, she had many friends who would visit her whenever. So yes, you guessed it!

I was getting comfortable in the kitchen, stirring the mixture in the double boiler and making caramelised sugar at the same time. Everything would have gone perfectly if it wasn't for the doorbell. Mum's got a visitor and I had to get the door! Auntie J came with food for everyone. Assam Laksa for tea!! No decent Penangites will refuse laksa, especially when it's right under your nose with it's complex spicy, sour and fish aroma that fills the whole space with that delicious smell. It seemed I got caught up in the moment and forgot all about my sugar! Yup it's burnt. I was so upset about it, but I got on with the laksa and chat to Auntie J. Will worry about that sugar later.

While Auntie J was spending time with mum, I got on with my kaya making. The caramelised sugar was the secret to making the ultimate kaya so that step could not be omitted. Everything got on smoothly but then, the doorbell rang again! By that time, I was lucky enough to have finished that very important step. This time, it was my lovely neighbour. She let me carry on with what I was doing so I could save this supposedly yummy coconut jam.

By the time I was done making the jam, I was wary of what it might taste like. I knew the colour was not right but I had to try it! A good cook tastes their food before anyone else does. It tasted good, although was not perfect. Later when I wheeled mum to the kitchen, she put a spoonful of that kaya in her mouth, looked at me, smiled and gave a THUMBS UP!! That made my day. A kaya thumbs up from mum!!


This is it! It was not perfect, texture and colour-wise but it tasted good enough for a thumbs up!

Hottest day of the year in UK

UK is known for its unpredictable weather. So when the temperature soars above 30C, everyone was out of the house. For the rare few who stayed in, this was what you missed. The sizzling hot sun, warm breeze, topless men, girls in skimpy shorts and sexy sundresses, cold wine, and lots of food in the park with the company of great mates. Regent's Park was the place to be, one of my favourite London parks.

We picked the perfect spot by the river surrounded by trees and birds, and laid out the white and yellow striped mat on the grass, trying to avoid trail of the duck poop. The rest of the day was a bliss with food, drinks and laughters.

It was suppose to be a lazy weekend of doing nothing. But my dear friend wanted some kaya for the amazing weather of sitting out in the park, eating and chatting. So the mission was to get the ingredients. Off I went, geared in sunnies and my new leather sling bag, not forgetting my camera. When the weather is as good, most photos turn out looking amazing, same as everyone else's mood. Everyone seems happy and friendly, smiling and saying hello. If only people do that everyday.

Walking in the East End has never been dull! The once plain walls and shutters made exciting with the very artistic talent of colours and lines, shops made interesting with installations behind the glass windows, and the fashion sense of the care-free and eccentric. None of these spell D-U-L-L!!

When I arrive at the oriental shop down the road for the ingredients, they were out of pandan leaves which are essential to make kaya fragrant. So instead of the initial quick ingredient shopping trip, I had to take 2 buses to Chinatown. I ended up coming home with the kaya ingredients and a bag of summer clothes that were on sale!! Girls can never say no to sales :p

By the time I got home, it was pretty late and my stomach was growling. For those of you who know, I am not a happy person when hungry. So kaya making came after dinner. Guess what!! I forgot eggs!! ARRrggghh… It was almost 10pm and Tesco was about to close.. What’s worse, when I got there, it was 9:58pm and they won’t let me in even with the ‘all I need is eggs and I’ll die of hunger without eggs’ look. The puppy dog eyes did not work either. Lucky, there’s an off license shop opposite. Phew..

First attempt : Kaya

First attempt and a success


First attempts are always pretty daunting. There is the usual feeling of conflicting excitement.

Believe it or not, I picked and scheduled a date on my calendar so I won't avoid or slot in any last minute events. It is as if getting ready to go on a first date, except there is no exit strategy. Everything was planned out; searched and read through recipes ahead, picked one that's less intimidating, bought ingredients the day before and made sure the recipe has been well understood. All ingredients were laid out and measured before cooking commence so no ingredients will be missed out. Although I admit missing an ingredient on this first attempt. No 'pandan' leaves were to be found nearby so it was omitted.

With everything already well prepared, I followed the already simple recipe very closely. When it comes to step 5 (caramelising sugar), I panicked since there is usually a very high percentage of messing up. There is a chance the sugar will burn but it did not! So I proceed to adding the caramelised sugar into the mixture. The sugar somehow started solidifying and was stuck on the whisk. I panicked again! At that very moment, I thought all effort has been wasted. Luckily, being patient helped. It melts away with further stirring. The mixture became thicker after a an hour of stirring with 'The Apprentice' on iPlayer to keep me entertained. Everything turned out fine! It looked like kaya, smells like kaya and tastes like one too!!

I can proudly say my first attempt was a success. Although it does not taste as heavenly as I would like it to be, it still is delicious homemade kaya. It will definitely be much better with the aromatic pandan leaves. Will make sure to have that for the next attempt.

Guess what's my treat for this successful attempt :) Kaya and butter on toast with soft boiled eggs for breakfast!! MMmmm...

The soft boiled eggs wasn't boiled long enough so it came out almost raw. For those of you who havent made soft boiled eggs, it is actually not easy to master. It has to have perfect timing for the runny egg yolk.

Dear all,


Welcome to my new blog. If you haven't already read the introduction page, I am set out on a kaya making challenge. The mission is to try out different recipes to find the best there is. Throughout the whole process, my fellow mates who are ever so courageous will be my guinea pigs. Their job is to tell me that the kaya or coconut jam tastes aweful. The harsher they are, the better. Of course, I hope to get 5 star review one day. Before that day comes, there will be lots of hard work ahead.

When the ultimate kaya is finally created one fine day, that is when kaya will take over marmalade inLondon!!
"Marmalade on toast, my dear?" "Can I have kaya and butter on toast instead, mum."
